Dosa

Dosa is a traditional South Indian pancake made from fermented rice and lentil (urad dal) batter. It is naturally gluten-free, light, crispy, and exceptionally aromatic.

The process of making dosa is far more complex than it may seem. It requires precise ingredient proportions, many hours of fermentation, careful temperature control, and a great deal of culinary experience.

It is the fermentation that gives dosa its distinctive flavor, gentle tanginess, and unique texture — crispy on the outside and soft on the inside.

Although it looks like a simple pancake, an authentic dosa is one of the most technically challenging dishes in Indian cuisine.

Each portion is prepared fresh, with the batter hand-spread on a heated griddle into a perfectly thin layer.
